Chocolate Date Nut Bars

These beauties are a must-have staple in your home if you crave something sweet now and then and are looking for a healthy alternative.  They happen to be gluten free and don’t require any baking, you do need a food processor or blender to grind up the nuts and dates.  My family loves these as an afternoon snack and be prepared to make them over and over and over again.


1 1/2 cups raw cashews

1 1/2 cups dates

1/2 cup almond butter

1/2 cup maple syrup

1/2 cup coconut flour

1/2 cup unsweetened shredded coconut

1/2 tsp almond or vanilla extract

1 1/2 cups semi-sweet chocolate chips


  1. Place cashews in a food processor and grind into a fine meal.
  2. Pit and chop the dates and add to food processor.  Also, add almond butter, maple syrup, coconut flour, shredded coconut, and almond or vanilla extract and pulse until the dough forms a ball and dates are finely chopped.
  3. Line a small sheet pan with parchment paper and press mixture onto paper with the back of a measuring cup. Refrigerate for about 4 hrs.
  4. After it’s cooled, combine chocolate chips in a double broiler and stir until melted.  Pour over cooled mixture and place back into refrigerator until chocolate has hardened.
  5. Cut into rectangles, place into a covered container and keep refrigerated.
